Wendy Rowe eats beautiful and healthy

From time to time, the body craves something sweet, usually when your energy levels are low and you feel tired. When I’m busy or exercising a lot, I like to keep some Date Energy Bites made with my recipe on Eat Beautiful on hand as a healthy alternative for when I need a quick pick-me-up.

Dates come into season in the fall, so I usually reserve them for this season based on my seasonal eating philosophy, but if you have some in the pantry, this is a great anytime resource. Dates are also a great natural alternative to refined sugar. My date energy balls are so quick and easy to make and taste amazing too – they still feel like an indulgent treat!

Date Energy Bites

160 calories per ball

120 g pitted dates
120 g dried apple rings
120 g dry roasted almonds without salt
120 g gluten-free oat flakes
1 tablespoon maple syrup
1 teaspoon ground cinnamon
A handful of finely chopped pistachios

  1. Cover the dates in hot water and soak for 10 minutes to soften. Drain and squeeze out the water.
  2. Place in a food processor with all the remaining ingredients except the pistachios, add 1 tablespoon of water and blend until the mixture becomes a paste with a sticky, dough-like consistency. Add another tablespoon of water to loosen more, if necessary.
  3. Scoop out spoonfuls of the mixture and, with clean, wet hands, form into ten balls. Place the pistachios in a bowl and roll each ball in the nuts to coat.
  4. Store in an airtight container in the refrigerator or freezer.
